Pizza schmizza
This was one of those clean out the fridge recipes. I used a cheap box of pizza dough (the jiffy kind. It’s really easy. Possibly because I used to work in pottery in college and enjoy kneading dough) topped with marinara sauce and then some shredded mozzarella and some kind of spanish cheese we bought at trader joes–ibaruchi or something. I don’t like it that much on crackers or by itself but it shreds okay and has a nice tartness that works on the pizza. Some sliced onion, tomato and finally the rest of the bag o’ spinach. Baked until the cheese was melty and it was good–I liked the spanish cheese on the pizza the best, actually.
